The summer in the midwest!! This is peak season for zucchini, summer squash, eggplant, and other squash varieties. Contrary to popular belief, they are technically a fruit, not a vegetable. What is the Difference Between Yellow Squash and Zucchini?
Ways to eat zucchini and squash
Both can be grilled, steamed, baked, blanched, fried, as a soup, eaten raw just like a vegetable and even as a pasta!
All are low in calories at only about 15 calories a serving. Both are a good source of Vitamin A, Folate, Potassium, and Magnesium.
What is the difference between the two?
Zucchini
The different colors may mean a different plant. There is zucchini which is generally green but can also be a golden yellow. Its shape is more consistent than a squash. And often confused with squash! When eaten, it is a much different flavor.
This fruit is a fairly new, relatively speaking, in the US. Surprisingly, it was not introduced until the 1920’s.
It is a great way to add the above vitamins to your diet by shredding and adding to pasta sauces, bread, stews, soups, salads, and stir-fry. The smaller the zucchini the sweeter the flavor. So depending on what you are adding it to pick accordingly.
Squash
Squash, on the other hand, was one of the 3 main crops grown by the Native Americans. It was a staple in their diet. There are many varieties throughout the year. Thus, making it easy to use year round.
The most popular right now is the summer squash. Considered an immature fruit it requires little to no cooking. Rather, the winter squash which is a mature fruit which needs to be cooked for maximum flavor and texture.
These versatile plants that can be added to almost anything! You can make pasta, or a side dish, or just serve it raw!
